The Battle of the Milks: A1 vs A2 Milk
To understand pure ghee, we must first look at the milk it comes from. The big debate today is between A1 and A2 milk. The difference lies in a single protein called Beta-casein.
A1 Milk: This comes from foreign or crossbred cows (such as Holstein-Friesian or Jersey). When your body digests A1 milk, it releases a compound called BCM-7, which may be associated with bloating, inflammation, and digestive discomfort in some people.
A2 Milk: This is the original milk produced by native, hump-backed Indian cows. It does not produce BCM-7 during digestion, making it easier to digest for many people and naturally nourishing.
